Ours is a wonderful alternative. Grate the cheese and add to the salad. Warm the beans if you like and add a little ground chicken, turkey or crumbled tempeh. Even though the carbohydrate content of this salad seems high, it has a very low glycemic index. The beans are also a rich source of folic acid and contribute to the high fiber content.&lt;br /&gt;Ingredients:4 cups lettuce, torn into pieces 1 medium red bell pepper, chopped 1/2 cup chopped green onions 1 small cucumber, peeled and chopped 1 cup pinto beans, drained of juice 2 oz baked tortilla chips, broken into pieces 1/4 cup salsa&lt;br /&gt;Instructions:In a salad bowl, mix together the vegetables, pinto beans and tortilla chips. And, while you may love having VLT (veggie lettuce tomato) sandwiches everyday for lunch, you may still have mountains of tomatoes just waiting to be used.&lt;br /&gt;I have to admit that in past years, I have even let them sit out so long, waiting for them to have a purpose, that I later found tomatoes rotting on my counter. This year, especially with attempting to be better about what money we are spending, I vowed to not let them go to waste.&lt;br /&gt;&lt;br /&gt;Here are some ideas for using your little tomato treasures:&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Salads&lt;/strong&gt; - Slice larger tomatoes or use cherry or grape tomatoes&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Fresh Salsa&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Soup&lt;/strong&gt; - Tomato Soup or Gazpacho are both perfect choices.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Broil&lt;/strong&gt; - Cut tomatoes in half and top with Parmesan cheese before putting them in the broiler for 3 - 5 minutes.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Sandwiches&lt;/strong&gt; - Almost any sandwich can benefit from a couple of slices of these lycopene-filled darlings.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Saute&lt;/strong&gt; - Add these to your favorite pasta dish or they make a great garnish on top of chicken or fish.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Roast&lt;/strong&gt; - Put them in with a little olive oil and some salt for a great side dish.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Freeze&lt;/strong&gt; - Dunk tomatoes into boiling water and then remove their skins. Then, cut them in half, remove the seeds, and pop them into freezer bags. Who doesn't love fresh tomatoes in the dead of winter?&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Homemade Pizza&lt;/strong&gt; - Roma tomatoes are my favorite for topping homemade pizza!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ketchup&lt;/strong&gt; - Try your hand at making homemade ketchup.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Canning&lt;/strong&gt; - Though this can be a little more challenging, this is a great way to preserve your tomatoes for long term use.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Pick Them Before They're Red&lt;/strong&gt; - Then you can make Fried Green Tomatoes! Yum!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Give Them Away&lt;/strong&gt; - Scope out which of your neighbors don't have garden, and try surprising them with a basket of fresh tomatoes! A salad is typically a good choice, but be aware that dressings and toppings like cheese and croutons can add fat and calories. The GM salad is REALLY good though!!!&lt;br /&gt;Simply Coastal: Everything in their simply Coastal Section is a winner, broiled with lots of lemon…ask for little to NO butter or EVOO as an optional broiling method.&lt;br /&gt;St. Peters Fish&lt;br /&gt;Swordfish Lobster Tails&lt;br /&gt;Jumbo Shrimp&lt;br /&gt;Atlantic Salmon&lt;br /&gt;Entrée: A few really tasty dishes with excellent benefits!! I especially like to recommend the free range chicken. Free range is a method of farming husbandry where the animals are allowed to roam freely instead of being contained in any manner.&lt;br /&gt;Roasted Free-Range Chicken (watch the crispy onions)&lt;br /&gt;Cajun Blackened Red Snapper&lt;br /&gt;Seafood Paella&lt;br /&gt;Sides:&lt;br /&gt;Baked Potato. Try mustard on the baked potato instead of butter or sour cream. It’s delish!&lt;br /&gt;Basmati Rice. Basmati is a variety of long grain rice, notable for its fragrance and delicate, nuanced flavour. Its name means "the fragrant one" in Sanskrit, but it can also mean "the soft rice." He began by addressing the state of America's health care system. He described it as being a DISEASE MANAGEMENT SYSTEM rather than a health care system. A profound but sadly true thought. He provoked our thoughts by questioning the assumption that the only way to treat disease is by giving drugs. Nutrition is rarely ever looked upon as "medicine." Over 40% of hospitals in this country have fast food restaurants on their premises!! Astounding!! Diabetes in young men ages 20's-30's within 10-15 years will have a dramatic rise of epidemic proportions of cardiac disease.&lt;br /&gt;&lt;br /&gt;Integrative medicine is different than alternative medicine. It aims at restoring the focus of medicine on health and healing the body to repair itself. It insists on looking at human beings as whole persons. It takes into account all elements of lifestyle. It protects the physician patient relationship which in itself can initiate a healing response.&lt;br /&gt;Dr. Weil is inspirational and brilliant in teaching us about Healthy Aging!!! Waldo Emerson&lt;br /&gt;An affirmation is a wish stated as if it is already true. Thinking, saying, or writing affirmations is an easy way to bring positive change into your life. Amazing results in life come when we change our habits. Our habits change when we have a change in attitude. Affirmations are a way we can change our attitudes.&lt;br /&gt;Your current beliefs and habits have come about because of repeated thoughts. Many of these thoughts have been self limiting and destructive. The repetition of negative thoughts is discouraging and affects your motivation and confidence. It is hard to feel motivated when you are skeptical that you can get beneficial results. Replacing negative thoughts with affirmations, then, can help you change your attitudes and encourage you to believe in yourself and your good luck. As you adopt more positive attitudes and feel encouraged, your actions and habits will shift. When your actions and habits come into alignment with success, then success will come to you quickly.&lt;br /&gt;Choose an area in your life where you would like to have change. Perhaps you would like to earn more money. You might choose for an affirmation, “I earn a lot of money.” This states it as if it has already happened. This is good. Or maybe you would like, “I get paid well for providing quality work.” Play with it until it feels right to you. Make your statements short and sweet, and always as if they have already come true.&lt;br /&gt;You can also say it out loud. Repetition and passion are both very important with affirmations. You want to repeat it often enough that you have it memorized. This will be handy when situations come up that are critical to your achieving your dreams.&lt;br /&gt;Passion is what helps your statement to feel real and comfortable to you. In research presented at the 2005 American Chemical Society meeting in Washington, D.C., an American research team revealed that mushrooms contain higher concentrations L-ergothioneine than either of the two dietary sources previously believed to contain the most: chicken liver and wheat germ.&lt;br /&gt;Testing mushrooms consumed in the U.S., the team found that shiitake, oyster, king oyster and maitake mushrooms contain the highest amounts of ergothioneine, with up to 13 mg in a 3-ounce serving. This equals forty times as much as is found in wheat germ.&lt;br /&gt;Of the most commonly consumed mushrooms, portabellas and criminis have the most L-ergothioneine, followed by white buttons. White buttons, the most popular of all mushrooms consumed in the U.S., contain up to 5 mg per three ounce serving-12 times as much as wheat germ and 4 times more than chicken liver.
